Well, Happy Friday y’all!

We’re just about to tip on over into the weekend and I’ve got myself a perfect recipe for one of those slow, drizzly afternoons.

It’s a mighty quick and easy vegan Sunday roast, all cooked up in just one pan!

You chop it all up, season it good, toss it around, glaze it over and coat it in just a few moments.

Then you let it do its thing roasting away in the oven while you’re free to set your table, enjoy a glass of vino and take some load off.

The real trick here (a sort of magical) is this big ol’ block of smoked tofu. It’s packed full with flavor and gets an irresistible balsamic glazed crust right there in the oven.

It’s a grand meal if you’re eating solo or planning a romantic evening for two. But don’t be shy to double or even triple the recipe if you’ve got friends coming over for a cozy Sunday afternoon roast.

Super Easy One Pan Vegan Sunday Roast

Ingredients

  • 1 big carrot
  • 1 big parsnip
  • 1 red onion
  • 5 garlic cloves
  • 2 potatoes
  • 1 sweet potato
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • ½ Tbsp lemon juice
  • 1 Tbsp maple syrup
  • Generous pinch of pepper & salt
  • 1 tsp dried thyme
  • 200 g smoked tofu

Instructions

  1. Pre-heat the oven to 180˚C. Roughly chop the vegetables, potatoes and onions and place them into a baking tray. Add the the garlic cloves as a whole.
  2. In a jar mix together the oil, balsamic vinegar, lemon juice, maple syrup, thyme, pepper and salt. Pour it over the vegetables and toss to cover it all evenly.
  3. Make a little space on the baking tray and place the smoked tofu in the middle. Brush the top with the balsamic olive oil glaze and pop the tray in the oven.
  4. Roast for 30 minutes then give everything a good toss and bake it for another 15 to 20 minutes. I like to serve mine still in the tray and let everyone tuck in. Enjoy!
