Vegan Blueberry Banana Breakfast Smoothie

Happy Monday, y’all! It’s a brand new day, fresh start to the week and I reckon it’d be right nice to kick things off with a tasty and good-for-you smoothie recipe.

This here vegan blueberry banana smoothie has quickly climbed its way up to being one of my top two breakfast smoothies.

It’s downright creamy, bursting with flavor and it’ll remind you of a good ol’ blueberry muffin.

Toss in some soaked oats and you’ve got yourself a smoothie that not only adds creaminess but’ll keep ya full for longer as well.

Plus, it’s about as quick ‘n easy to make as they come!

Whenever I whip up this smoothie after my mornin’ exercise routine, I throw in a scoop of pea protein powder to help my muscles grow strong and recover.

Vegan Blueberry Banana Breakfast Smoothie

Serves: 1

Ingredients

  • 30 g oats, soaked
  • 125 ml water
  • 1 Tbsp ground flax seeds
  • 1 chopped frozen banana
  • 150 g frozen blueberries
  • 150-200 ml plant based milk of choice
  • 1 scoop vegan protein powder (optional)

Instructions

  1. Soak the oats in 125 ml of water for at least 1 hour or overnight.
  2. Place the soaked oats, flax seeds, frozen banana, frozen blueberries, milk and protein powder if using in a blender and blitz until smooth and creamy. You can add more milk if you like your smoothie consistency a bit more liquidy.
  3. Enjoy!
