Happy Thursday! It’s been incredibly hot and sunny in London for the past few weeks. And even though this weather is very unusual for the UK and I find this heat wave a bit concerning, I’m also enjoying every minute of it!
These long, hot summer days make me want to lounge around in the garden and eat chilled and frozen things all day long.
Along side a good amount of ice cream (lots new flavours coming soon!), I’ve started craving smoothies. And believe it or not, I’m one of those vegans who doesn’t really drink smoothies… I’d choose a vegan burger or a slice of chocolate cake over a smoothie any day. Well, up until now that is.
At the moment I can’t think of a better way to start the day than with a chilled, creamy, fruity smoothie. So here we go, here’s my take on a green smoothie. Sweet and fruity, of course, and very moreish!

- 1 ripe banana, sliced & frozen
- ½ ripe mango, roughly chopped
- 2 handful baby spinach
- 200 ml apple juice
- Freeze the banana slices over night.
- Place the frozen banana, mango, baby spinach and apple juice in a blender and blitz until smooth and creamy.
