Vegan Nut & Caramel Chocolate Bars

I was never a big fan of chocolate bars. I’m talking the chocolate covered nut, nougat and caramel bars, such as Mars, Snickers, Bounty and so on. I’m very much a fan of plain dark chocolate bars, or dark chocolate bars with a pinch of salt or orange or chili. You get the picture.

But THESE bars change everything.

The other day I was playing around in the kitchen again, making chewy coconut milk caramel and looking for flavours to combine it with. I ended up creating a macadamia-vanilla base/filling, poured the caramel ontop, sprinkled it with peanut halves, cut it into slices, covered them in chocolate and voila: Chocolate bars!

And oh my god they’re delicious. Kind of like Snickers. But so much better. HA!

  • Macadamia-Vanilla Layer:
  • 1 cup macadamia nuts
  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 Tbsp coconut cream
  • 1Tbsp coconut oil
  • 1 cup oats
  • Caramel Layer:
  • 1 ½ cups coconut cream
  • 1 cup light brown sugar
  • 1 tsp vanilla extract
  • pinch of salt
  • ½ cup peanut halves
  • Chocolate:
  • 1 cup chopped dark chocolate
  • 1 Tbsp coconut oil
  1. Macadamia-Vanilla Layer:
  2. In a blender or foodprocessor blitz the macadamia nuts, maple syrup, vanilla extract, coconut cream (firm top part of coconut milk), coconut oil, and oats until you have a clumbly and sticky consistency.
  3. Press the mixture onto a baking tray and put it aside.
  4. Caramel Layer:
  5. On the hob bring the coconut cream to a boil, then add the light brown sugar.
  6. Cook for about 15 minutes on a medium heat and stir the entire time. It's vital that you don't stop stirring so the mixture wont burn.
  7. The mixture should boil and create bubbles that reach half way up (or a bit more) the sauce pan.
  8. Once you have a thick and light golden brown sauce pour it ontop of the macadamia layer, spred it until everything is covered and sprinkle with the peanut halves.
  9. Pop it in the fride and let it set for at least 10 minutes, then cut it into (chocolate bar sized) slices.
  10. Melt the dark chocolate and stir in the coconut oil.
  11. Dip the slices in melted chocolate until they're fully covered. I decorated mine with chopped peanuts.
  12. Enjoy!

    They look really yummy, Alex, thanks for posting! Could I use maple syrup instead of sugar?

      Hey! I haven’t tried using maple syrup for the caramel layer but I think you need to boil sugar and cream to get proper caramelisation. If you want to keep it more natural you could blend dates with coconut cream or peanut butter until you have a smooth creamy texture and use the mixture as the caramel layer instead. Good luck! X
