Vegan Salted Dark Chocolate Dates Stuffed With Almonds

Well howdy, y’all! Happy Thursday indeed! Now I ain’t offerin’ ya a proper recipe today, more like a culinary concept. It’s a dang breeze to put together, requirin’ just four simple ingredients, and it won’t take up much of your time neither. On the menu? We got ourselves some Medjool dates, stuff ’em full with toasted almonds, then give ’em a good ol’ coat of dark chocolate and finish ’em off with a sprinkle of sea salt flakes. Ain’t nothin’ to it and yet they’re finger lickin’ good! The savoury sea salt and the bitter dark chocolate offset the sticky sweetness of them caramel-like dates while the toasted almonds provide that satisfying crunch. I reckon these treats could make for one helluva last-minute Christmas gift. They whip up faster than you can say “Happy Holidays” but still look mighty fancy if I do say so myself. Y’all agree? Now if y’all decide to whip this up in your own kitchen, don’t forget to tag your photo with #myvibrantkitchen on Instagram. Nothing gives me greater joy than seein’ all y’all beautiful recreations! Prep time: 20 mins
Total time: 20 mins
Serves: 20

Ingredients

  • 20 medjool dates
  • 20 unsalted almonds
  • 200 g dark chocolate
  • Sea salt flakes

  1. Toast the almonds in a frying pan (no oil necessary!) until they start turning golden brown.
  2. Cut open one side of each date and remove the pit. Replace it with an almond and press the date shut again.
  3. Melt the chocolate in a bain-marie (water bath). Once fully melted, dip each stuffed date in the chocolate and place it on a sheet of parchment paper.
  4. Sprinkle sea salt flakes on top while the chocolate is still wet.
  5. Let it dry for at least one hour before eating or placing them in a gift box. Enjoy!
