Every summer, my grandchildren visit, bringing with them a sense of adventure and a love for the vegan treats I make. This year, amidst their usual requests, my youngest grandchild, Lily, asked for something new – a vegan brownie.
As a longtime vegan, I’ve experimented with many recipes, but this time I wanted to create something quick, easy, and delightful. I decided to use whole wheat flour, coconut sugar, and instead of my usual peanut butter, I used almond butter, ingredients that are not only vegan but also healthier.
The result was a 1 Minute Vegan Almond Butter Microwave Brownie in a Mug. The kids were thrilled! Lily, with her chocolate-covered smile, declared it the best brownie she’d ever had. This recipe has since become a favorite, adding a sweet note to our cherished summer tradition.

1 Minute Vegan Almond Butter Microwave Brownie in a Mug Improved Recipe! (Almonds)

Ingredients
- 2 Tbsp whole wheat flour
- 2 Tbsp coconut sugar
- 2 Tbsp unsweetened cocoa powder
- Pinch of sea salt
- 1 Tbsp coconut oil
- 2 Tbsp water
- 2 Tbsp almond milk
- 1 Tbsp almond butter
- ½ tsp vanilla extract
Instructions
- Combine the whole wheat flour, coconut sugar, unsweetened cocoa powder and a pinch of sea salt in a microwave-safe mug.
- Add the coconut oil, water, and almond milk to the dry ingredients and stir until the mixture is smooth and well combined.
- Place the almond butter in the center of the batter and gently push it down until it’s fully covered by the brownie batter.
- Stir in the vanilla extract for an added hint of flavor.
- Microwave the mug for 1 minute. Allow it to cool for a few seconds before serving. Enjoy this healthier, yet equally delicious, vegan treat hot.
