Vegan Coconut Chocolate Bars Aka ‘Bounty Bars’

Now y’all, this might be the first recipe I’ve done shared in about a month that ain’t got nothin’ to do with the festive season or wintertime. Though if I’m just spitballin’ here, reckon they’d make fantastic stocking stuffers!

I just can’t help myself, y’all. I’m so full of holiday cheer right now, I swear I could find a hint of Christmas spirit in an iced cold glass of lemonade.

Now let’s git to talkin’ ’bout vegan bounty bars. These here coconut-chocolate bars are the absolute perfect mix of moist ‘n sticky but crumbly, and downright loaded with coconut flavor.

Then we dip ’em in smooth, rich dark chocolate. What’s even better is they’re super easy to whip up!

Vegan Coconut Chocolate Bars Aka ‘Bounty Bars’

Ingredients:

  • 35 g coconut oil
  • 150 g coconut cream
  • 50 g icing sugar
  • 1 tsp vanilla extract
  • 200 g desiccated coconut
  • 200 g dark dairy-free chocolate

Instructions:

  1. Add the coconut oil, coconut cream and icing sugar to a saucepan and heat the mixture on medium heat until melted. Add the vanilla extract and stir until you have a smooth liquid.
  2. Take the sauce pan off the heat and fold in the desiccated coconut. When the mixture is well combined use a spoon and your hands to shape logs.
  3. Place the coconut logs on a plate and let them set and firm in the freezer for at least one hour.
  4. Melt the chocolate in a water bath and use a fork to dip the frozen coconut logs in the chocolate. The chocolate will set almost immediately. Let the vegan bounty bars defrost for 30 minutes.
  5. You can store them in an airtight container for about a week. Enjoy!
