Sustainable and Savory Vegan Croke Pot Stew Recipe

Ingredients:

– 2 tablespoons olive oil – 1 large onion, diced – 3 cloves of garlic, minced – 2 carrots, peeled and sliced into rounds – 2 celery stalks, sliced – 1 red bell pepper, chopped – 4 medium potatoes, cubed – 1 cup of green beans, chopped – 1 can (15 oz) chickpeas, drained and rinsed – 1 can (15 oz) diced tomatoes – 4 cups of vegetable broth – 2 teaspoons dried thyme – Salt and black pepper to taste

Instructions:

1. Turn on your crock pot to the saute setting. If your crock pot does not have this setting, you can do this step in a separate pan over medium heat. 2. Add the olive oil into the crockpot or pan and allow it to heat up for a minute. 3. Add your diced onions and minced garlic into the heated oil. Saute them until they are fragrant and the onions become translucent – approximately five minutes. 4. Next add in your sliced carrots, celery stalks, chopped red bell pepper to the mixture in the crock pot or pan. Saute these vegetables until they begin to soften – about another five minutes. 5. If you were using a separate pan for sautéing, transfer your sautéed vegetables into your crockpot at this point. 6. Add in your cubed potatoes ,chopped green beans , drained chickpeas ,diced tomatoes (with their juice), vegetable broth , dried thyme , salt ,and pepper. 7. Stir everything together well so that it’s fully combined. 8. Cover your crock pot with its lid. 9. Set your crock pot to cook on low for six hours or high for four hours – until all of your vegetables are tender. 10. Once done cooking, stir everything again before serving to make sure it’s all well combined as some ingredients may have settled during cooking time. 11. Taste test the stew and add additional salt or pepper if needed. 12. Serve hot with some crusty bread or over rice for a hearty vegan meal!
