Just the other day, I found myself a-strollin’ down them London streets when outta nowhere, it commenced to rainin’ cats and dogs.
Now, y’all might think after livin’ in this here country known for its regular rainfall for over a year that I’d remember to tote an umbrella when I’m headed out.
But nope. So there I was, racin’ down the road and into the nearest grocery store just to take cover.
Now mind you, I’d already done my market haul just the day afore so wasn’t really on the hunt for anything particular.
I was just ambling up and down them aisles waitin’ on that rain to let up, when lo and behold: MULLED WINE!
Middle of December it was, cold and wet as a fish’s wedding, me drenched from hat to boots with nothin’ planned for my night.
So naturally, mulled wine seemed like the best godsend idea in creation!
Hightailed it back home quick as a wink where I changed into some dry britches and fired up the TV. Poured myself a big ol’ mug (or mayhaps two) of that piping hot mulled wine.
Y’all can bet your bottom dollar I felt like I’d found heaven right there in my livin’ room!
The only thing coulda made that evenin’ more perfect would be some food – good ol’, sweet comfort food at that! My tummy started hollerin’, somethin’ fierce too.
So wouldn’t ya know it? There’s me whipstitching together a muffin mix at half past eleven at night runnin’ on naught but mulled wine (which naturally ended up mixin’ in with my muffins too).
Them muffins are best enjoyed hot off the oven rack – straight-out divine! And let me tell ya’, they sure made one heck of a breakfast muff next morn’.
Vegan Mulled Wine Muffins Recipe

Ingredients:
For the muffins:
– 3 cups wholemeal flour
– 1 ½ tsp baking powder
– 1 cup light brown sugar
– 1 ½ cups mulled wine
– ½ cup vegetable oil
– 1 ½ tsp apple cider vinegar
– ½ cup dark chocolate chips (or chopped chocolate)
– Zest of 1 organic orange
For the icing:
– 1 cup icing sugar
– 3 Tbsp mulled wine
Instructions:
1. Preheat the oven to 190˚ Celsius.
2. Place the flour, baking powder and sugar in a bowl and mix.
3. Add the mulled wine, the vegetable oil and vinegar and stir until you get a well combined, smooth batter.
4. Lastly add the chocolate and the orange zest and mix again.
5. Pour the batter in muffin cases or wraps on a muffin tray and pop them in the oven. Bake for 20 minutes or until a toothpick comes out clean.
6. For the icing sift the icing sugar and stir in the mulled wine until you get a smooth icing mixture.
7. Pour on the muffins and they’re ready to be devoured!
