Now, don’t go thinking that because these are vegan protein bars they won’t pack a punch; these little beauties are full of energy and made from all-natural ingredients. Plant-Based Power: Vegan Protein Bars Recipe

Ingredients:

  1. 1 cup of rolled oats
  2. 1 cup of vegan protein powder (vanilla or chocolate)
  3. ½ cup of almond butter or any other nut butter
  4. ½ cup of agave syrup or maple syrup
  5. ¼ cup of chia seeds
  6. ¼ cup of flaxseeds
  7. ½ cup of unsweetened almond milk or soy milk
  8. ½ cup of mixed nuts (crushed)
  9. ½ cup dried fruit (dates, raisins, cranberries, etc.)
  10. Optional: vegan dark chocolate chips for topping

Instructions:

  1. Start by blending the rolled oats in a food processor until they reach a flour-like consistency.
  2. Transfer the oat flour to a large bowl and add the vegan protein powder, chia seeds, and flaxseeds.
  3. In a separate bowl, combine the almond butter and agave syrup or maple syrup.
  4. Gradually pour the liquid mixture into the dry ingredients while stirring consistently.
  5. Slowly add the almond milk to the bowl while continuing to stir until all ingredients are well-mixed and form a dough-like consistency.
  6. Fold in your mixed nuts and dried fruit into the dough mixture ensuring they are evenly distributed.
  7. Line an 8×8 baking dish with parchment paper and press your dough evenly into it.
  8. Optional: Sprinkle vegan dark chocolate chips on top for added flavor and texture.
  9. Place the dish in your freezer for about two hours to allow it to set.
  10. After two hours, remove from freezer and cut into bars with a sharp knife.
  11. Store these delicious plant-based power bars in an air-tight container in your refrigerator for up to two weeks, or in your freezer for longer shelf life!
